ALOHA Burger

Hi guys! Been busy this past few weeks, but now i'm back! Our favorite fast food chain Jollibee's supply shortage was all over the news this month. No Chicken Joy, no spaghetti, and some other favorites. I'm not going to try to duplicate the chicken joy but the Amazing Aloha Champ!

I have yet to try the Amazing Aloha Champ yet but i guess the only difference between the two is that the amazing aloha champ has pineapple and bacon. So let's try to do this, here's what we need:

for the beef patties:

                    1/2k gound beef
                    1 pack breadcrumbs ( I used crispy fry seasoned breadcrumbs)
                    2 tbsp bbq marinade
                    1 onion, chopped
                    1 egg

Mix all ingredients for the patties except the egg, let it marinate for at least an hour (I marinated mine overnight). When your ready to cook the patties, add the egg and mix well. Pan fry or grill the patties. I was able to make seven-1/2 inch patties.

To assemble the burger, you need:

                    1 pack burger buns (6pcs)
                    sliced tomatoes
                    lettuce
                    fried  bacon, 
                    Sliced pineapple
                    1 can mushroom
                    1 bar quickmelt cheese
                    mayo-mustard mix

Prepare the buns, spread the mayo-mustard mix on the buns (you can spread either mayo-ketchup mix or just mayo if you want). arrange the aloha burger in this order -- burger patty, cheese, mushroom, pineapple, bacon, lettuce, tomatoes and the the other half of the bun. The burger should look like this:

The Jollibee Amazing Aloha Champ costs PhP 140 for a solo meal, PhP 179 for value meal and Php190 for a Super value meal (reg. fries & Float). My version costs between PhP500-Php550 but I was able to make 6 burgers with 1 extra patty.

You can serve the burger with onion rings or potato wedges. I served mine with civiche and chips. Enjoy the Holiday!

Baby Back Ribs & Mixed Veggies

After a stressful week, it's time to unwind with some home-cooked dinner. For this Sunday's dinner, I decided to have Baby-back Ribs with mixed Veggies. So off to the grocery I went to buy the ingredients - 1 kilo ribs, bbq marinade, carrots, broccoli, mushrooms, young corn and butter.

I marinated the ribs overnight (it also depends on you on how many hours you want it marinated), I used Clare Ole's BBQ Marinade, one for marinating and the other one for boiling. After marinating, it's time to make the ribs tender. I boiled the ribs in its marinade and added the other pouch with 2 cups of water. Boil it for at least an hour or when the meat is tender. When it is already tender, take it out then put it in a baking dish and bake it for about 20-30 minutes occasionally basting it with the marinade (the one that the ribs were boiled). 
While the rib's being baked (you can also grill or broil it). You can now start cooking the mixed veggies. Cut the veggies into bite-size. Saute veggies in butter (you can saute garlic with butter first before the veggies for added flavor) add some seasoning. I put a little olive oil for added flavor. Do not overcooked the veggies.

I Checked Kenny Roger's Roaster for their Baby Back Ribs Meal. For a half-slab rib with rice, 1 side dish and a muffin, it will cost you around PhP 315.00. For tonight's dinner of Baby Back ribs and mixed veggies, I spent a total of PhP 521.00 for the ingredients. The serving is good for 2-3 persons.
